Lighter, occasionally spicier, and more varied in flavors than the cuisines of other parts of India. Another distinctive feature of DOSA is the attention placed on pairing wines. The wine list was crafted by Mark Bright, an up-and-coming sommelier recently featured in the San Francisco Chronicle, Wine and Spirits and 7x7 Magazine. Bright specifically selected the globe-trotting, value-oriented offerings for synergy with South Indian cuisine.
